This recipe is from my friend Stephanie and they are divine! **note refrigerate**4 eggs
2 cups sugar
1 cup oil
1 16 oz. can of pumpkin
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 cup chopped walnuts (optional)
Beat together the eggs, sugar, oil and pumpkin. Then stir in the flour, baking powder, baking soda and cinnamon. Bake at 350 degrees for 25-30 minutes.
Once the cake has cooled you can frost with the cream cheese frosting. Recipe follows.
8 oz. cream cheese
1 cube butter
1 tsp. vanilla
2 cups powdered sugar
2 T milk
Mix the cream cheese and butter together till well blended then slowly add the remaining ingredients, until you reach your desired consistency.
Frost your cake and sprinkle with the walnuts (if desired). We have found these bars keep best if they are refrigerated!
