**this recipe comes from my friend Sheriece who is a gourmet cook. I always know when she gives me a recipe it wont be simple...BUT it will be the best thing you have ever tasted HOWEVER with this recipe it is fast, it is simple but taste BEYOND amazing!

INGREDIENTS
1/4 cup thinly sliced red onion, cut into inch long pieces
1 14-ounce can artichoke hearts, rinsed and coarsely chopped
1 medium tomato, seeded and diced (or a couple handfuls grape tomatoes, seeded)
2 tablespoons balsamic vinegar

sliced honey ham (lunch meat)

Combine onion, artichoke hearts, tomato, vinegar, oil, oregano, and pepperochini in a medium bowl. Cut baguette/french bread into horizontally ...on one side put the provolone....and on the other put cover with slices of ham

To assemble sandwiches, Spread on the artichoke mixture and top with the lettuce. Serve immediately.

French Dip Sanwiches

**I tried this recipe just a little while ago and thought it turned out pretty dang good..I served it with the sweet potatoe fry recipe!

1 pot roast, anywhere from 2 to 4 pounds
1 green pepper, sliced
1 red bell pepper, sliced
1 medium onion, sliced
swiss cheese slices
1 McCormick Au Jus sauce packet (found in the gravy mix aisle)
Rolls /buns

In crockpot, dissolve Au jus packet in 3 cups of cold water then add the roast (my roast was still partly frozen). Cook on low for 6-8 hours or high for 4-5 hours (I cooked mine about 6 hours on high)When it is finished, remove meat and seperate with a fork. In a frying pan saute green pepper, red pepper and onion in a little olive oil or butter if you are feeling chubby. Place swiss slices on buns and put under low broil until cheese is melted and lightly browned. Fill the rolls with the meat and veggies, then divide the Au Jus sauce into smaller bowls for dipping.

Ham & Swiss Cheese Rolls

recipe from my Aunt Maryann/Heather Wayment

16 rolls
1 lb ham
1 pkg swiss cheese
1/3 c mustard
1/2 c honey
1-3 shakes of worchestershire sauce
3/4 stick of butter
1 tsp onion powder
1 T poppy seeds

melt butter and honey together.(slowly) stir in mustard and other ingredients.
Grease the bottom of a 9 x 13
Cut rolls open and make lids. take all the lids off and place 1/3 mixture on bottom of the rolls. lay the ham and cheese down.
Put the lids back on and pour rest of sauce on top of rolls. Let it sit overnight (doesnt have to) Cover and refridgerate for 4 hrs. Cover with tin foil.
Bake @ 350 until golden brown, really keep and eye on it. has to be covered in tin foil. try like 20 min to start, may be 30 min when finished.
