Piggy Nachos.....aka...Memphis BBQ Nachos

** Thanks to Makray we now call BBQ nachos..."PIGGY Nachos"... Are you wondering how Kray gave it that name...Well our favorite BBQ restaraunt is CENTRAL BBQ...IT is DIVINE....
anyways heres the equation: Nachos + the place has pigs painted all over the windows= "Piggy Nachos" ....Smart little Kid~

1 pork roast ( I either use a pork shoulder or you can do pork tenderloin)
BBQ sauce: here is the link to Homemade BBQ sauce...it is good for pork roast or RIBS...mmmmm... http://waymentrecipes.blogspot.com/2009/09/bbq-ribs.html
Nacho Cheese ( I love costco's..taste just like the ball park nachos & freezes well)
Grated Cheese
Jalepenos
Cayenne Pepper

So you cook the roast in crockpot for several hours...adding homemade Bbq sauce after it has cooked for 3 or so hours...draining any juices during that time and than add bbq sauce...
Then Get your plate.....load it with chips...place the Nacho Cheese, a little grated cheese, some BBQ pork, jalepenos, and top with cayenne pepper

Pork Carnitas

PORK CARNITAS
** got this recipe from my friend Allie!

2 lb. pork tenderloin
8 oz. salsa verde (I use Herdez brand)
1 can Rotel tomatoes
1 can chopped green chilies

Place roast in crock pot & pour the other ingredients over roast. Cook on low until pork easily forks apart (about 8-10 hours). **I cook it on high for 6 hours** Take out roast and shred. Put shredded roast back in crock pot with the remaining juices. Serve on tortillas with cheese, avocado, sour cream, tomatoes, lettuce or cabbage (which makes it crunchier and yummier), cilantro. cut up limes to squeeze!
** if you will spray each side of the tortillas with pam and cook on stove...it makes them Delish!

Special Sauce (put in a blender....or I used my magic bullet)
** I add a squeezed lime to this mix**
1/4 tsp. pepper
1/2 bunch cilantro
1/4 tsp. salt
clove of garlic
1 sm jalapeno- seeds removed
1 C. mayo
1 tsp. vinegar
1 tsp. water

Moo Shu Noodles

I havent made this yet...but my friend Julie has...and I trust her "Asian Taste" she says it is DELISH!

Moo Shu Noodles

12-ounces fettuccine
3 tablespoons canola oil, divided
3 eggs, beaten
3 medium-sized boneless pork chops, thinly sliced (it is easier to slice thinly if pork chops are slightly frozen)
Ground black pepper
3 scallions, thinly sliced
2 tablespoons ginger (about a 2-inch piece), peeled and grated
3 to 4 cloves garlic, finely chopped or grated
1/2 pound mushrooms, stems removed and caps thinly sliced
1/4 cup hoisin sauce
3 tablespoons soy sauce
1/2 small head Napa or Savoy cabbage, thinly sliced
1/2 cup chicken broth

Cook Fettucine...acording to package...with a little salt and set aside.

Combine the hoisin and soy sauce together in a small bowl. Set aside.

In a skillet, heat one tablespoon oil over medium heat. Add eggs and scramble. When done, scrape them onto a plate and reserve.

In the same skillet heat two tablespoons oil over medium-high heat. Season the pork with salt and pepper, add to the pan and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes (don't overcook or pork will be tough!). Remove the meat from the pan onto the same plate as the eggs and keep warm.

Add the scallions, ginger and garlic to the pan, and cook until aromatic and the scallions are tender, about 1 minute. Add the mushrooms to the pan and stir-fry until golden brown, 4-5 minutes.

Add the cabbage to the pan and stir-fry until tender, about 3 minutes. When the cabbage is tender, add the reserved pork and scrambled eggs back to the pan along with the hoisin-soy mixture and the chicken broth. Stir-fry to fully heat through, about 1 minute, and then toss with the reserved cooked pasta. Cook to heat through and serve.
